What else can I blog about? Food seems to be the Number 1 topic for me during this pandemic, although it’s fair to say that it usually is during ‘normal’ times as well. Usually though, 65% of my food related posts are restaurant related…and not just what we’re eating at home!
So back
to what we’ve been eating at home. Still
recovering from knee replacement…these things do take a while…and ‘enjoying’
Day #206 of our home isolation in the face of Covid-19.
While the
recipe for the cheesy potatoes was simple, the result was over the top! The Gruyere cheese with the cream and garlic
took the finished product to a whole different level! They were indeed excellent…
Although we had a salad too, those potatoes were the primary side dish for our oven baked brisket. A couple of months ago, on a whim I had purchased a small 3.5 lb. beef brisket from our local Ingles supermarket. We had never prepared a brisket…so what was I thinking?!
All we
did was rub down the brisket with some Penzeys Brisket Rub we happened to have
on hand…then put the meat on a low rack and cook it low and slow until
tender. The first photo shows the
brisket right out of the oven and the second photo shows the brisket plated
with some of those potatoes. Great meal!
Great news for me! There were lots of leftovers… For breakfast a couple of days later, I heated up a mess of cheesy potatoes and brisket in a frying pan…and then stirred in a couple of nice farm fresh eggs. I sided this nice little wake-up meal with a slice of toasted rye bread.
Happily, there were even more of those potatoes! On a subsequent morning, I just put the remaining potatoes in a frying pan with some butter and got a bit of ‘crispy cheesy’ crust going. The second photo shows just how nice and brown the cheese was when I was done…
Then of course, I topped those terrific potatoes with 2 over-easy eggs. Another great start to one more day!
I also
made a brisket scramble one morning. In
addition, Laurie and I both had brisket sandwiches. FYI…there was a lot of ‘au jus’ in the bottom
of the pan that the brisket was baked in, but as you will see in another
upcoming food related post, even the au jus was put to good use!

Cheesy potatoes with eggs is darn hard to beat- they all look delicious. When I think of oven cooked brisket, my go-to recipe source is Ina Garten.
ReplyDeleteLove those potatoes! Bill has had a couple of surgeries. Started with sepsis and went to the ER and back home a couple of days later, then diverticulitis, then a colectomy and is doing really well now other than a little tired at times, so I haven't been cooking much lately other than something simple and easy.
ReplyDeleteI've been reading about your knee replacement surgery and am glad that you are doing better now. Bill went through that also several years ago. So hope you continue to do well and feel like new soon! You take care and the best of luck to you. Keep safe!

ReplyDeleteThose cheesy potatoes looked so good, Dave, and I definitely would have enjoyed them with breakfast eggs. We have never done a brisket buy after reading this post, it seems like a good new thing to try especially now that cooler weather is here and lighting the oven is a good thing. Hope the recovery is going well.
