Breakfast and a Bit of East Tennessee Scenery

Time for a break from our travels…and from restaurants too.  This blog is all about sights in beautiful East Tennessee and three of my most recent breakfast creations.

Take leftover macaroni and cheese, fry it in butter developing a nice crust, and then melt some pepper jack cheese over the top… 

Add 2 easy-over fried eggs on top of the cheese and mac ‘n cheese and it’s time for breakfast! (Tabasco added later…) I had a better photo but when I tried to transfer it to the blog, it insisted on being perpendicular...

It’s a good thing that I’m not a hunter!  This 4-legged resident of a nearby neighborhood just stood there and posed for us.  I don’t know what that floppy ear is all about though...

We loved these clouds that were highlighted by the setting sun…

Laurie took this photo at sunset in the Kahite neighborhood of Tellico Village.  Kahite is located in Monroe County.

Take a slice of buttered toast, fry 2 slices of 'new and improved' Spam with Bacon and top the whole thing with pepper jack cheese…

Then it’s time for those inevitable over-easy fried eggs!  Another very satisfying breakfast was achieved…

This is the Tellico River in the Cherokee National Forest, just below where it is joined by the Bald River.  With all of the rain we’ve had this year, the rivers are full and flowing fast… We have already equaled our average annual rainfall amount!  FYI…For those who love to fish, the Tellico River is a major trout stream!

These are the Bald River Falls near Tellico Plains Tennessee.  This beautiful waterfall is very accessible with this photo being taken from the bridge over the river.  Usually the water flow is not quite this spectacular in July and there would be swimmers in the pool below the falls.  For more information on Bald River Falls and other attractions in the vicinity of Tellico Plains, you can go to http://www.tellico-plains.com/about.html. 

Laurie took this photo of a ‘visitor’ on one of our screens.  It’s hard to beat Mother Nature when it comes to exotic designs!

It’s time for breakfast again!  These are smashed down leftover Katie’s Taters that we brought home after dining at Flaherty’s Irish Pub in Maryville Tennessee. (There will be a Blog on Flaherty’s in the near future) In any case, this appetizer from Flaherty’s consists of whipped potatoes with Benton’s bacon and fresh cabbage blended with Irish cheese, then breaded and quick fried.

I added a half slice of warmed up bacon to each of the refried ‘taters’…    

Then of course, I topped both of Katie’s Taters with an easy-over egg…adding Tabasco before consuming.  I love breakfast!!

  3. All three meals look like a mighty fine way to begin the day and I would enjoy them all. Lots of water coming over the falls for sure - I've never seen it like that.
